Step 1
Put the eggs in a pan and pour in cold water to cover; place over high heat. When the water starts to boil, turn off the heat, cover the pan with a lid, and allow to stand for 17 minutes. Don’t look.
Step 2
Pour hot water and pour cold water over the eggs. Drain and fill with cold water; let the eggs cool, for about 20 minutes. Wash the eggs under running water.
